Flank Steak and Shrimp with Summer Veggies

It’s dinner time at the EMC house, and boy do we have an amazing meal to share with you! It’s starting to be grilling season here in Michigan, and the Hubs is a class A griller! So let’s getting grilling!

We’ll be making Flank Steak and Shrimp with Summer Veggies. Serving size:  1/2 pound of flank steak, 4 shrimp and a cup and a half of summer veggies for 9 smart points.

Flank Steak

You’ll need:

  • 1 lb Flank Steak, trimmed and lean
  • 3-4 dashes of Worcestershire
  • Olive Oil, lightly coated
  • Black Pepper
  • Vegeta (or all-purpose seasoning)
  • Steak Rub (we used a bourbon molasses one)
  • Smoked Sea Salt

Shrimp

You’ll need:

  • 8-10 Shrimp
  • One Lime, juiced
  • Smoked Sea Salt
  • Blackened Seafood Seasoning
  • Worcestershire
  • Low-sodium Soy Sauce

Summer Veggies

You’ll need:

  • 2 small Zucchini
  • 2 bell peppers
  • half Red Onion
  • 3-4 dashes of Worcestershire
  • Olive Oil, lightly coated
  • Black Pepper
  • Vegeta (or all-purpose seasoning)
  • Smoked Sea Salt

Let the steak and shrimp sit in the seasonings for half an hour to an hour, and then throw those babies on the grill!

Note from Hubs: let the steaks get to room temperature before throwing them on the grill. This will prevent uneven cooking. Hope you enjoy!
