I promised you unstuffed peppers, and I am here to deliver! I was watching YouTube videos the other night, and I stumbled upon a food vlog for unstuffed cabbage. Well, problem. I don’t like cabbage. At all! So I was about to continue on my merry way when the idea of unstuffed peppers hit me! I know it’s probably been done before, but I am going off of my own brain thoughts. So here they are!
2/3 lb Extra Lean ground turkey (If you get Jennie-O, I just used half the package)
2 large green peppers, sliced
1/2 cup chopped onions
1 14.5 oz can diced tomatoes
3 tbsp tomato puree
- Add turkey and onions to a nonstick pan, and cook until the turkey is cooked all the way.
- Add peppers, tomatoes and puree to the pan, and season to taste. I added a little bit of garlic salt because I love garlic! Stir and simmer on low for 15 to 20 minutes, or until peppers are tender.
Points +: 3 points per serving, makes 4 servings.
That’s it! It’s super easy, and super yummy! You can serve this over rice (1 cup of brown rice cooked is about 5 points) if you want to turn it into more servings.
